Breakfast of Champions: A Week’s Worth

In my twenties breakfast consisted of coffee and a cigarette on my walk to work. Since I don’t smoke or walk to work anymore (and I like to think am a little wiser)…I try to eat something every morning. If I don’t, things generally start to fall apart by 10:30 as I get progressively grumpy and non-creative. Here are five breakfasts to get you inspired for the day ahead.

Day 1

Mondays! You know what Garfield said about Mondays. I am usually scrambling to get the day going and my kids out the door on time so a leisurely breakfast is not in the cards. Come to think of it, a leisurely breakfast is generally never in the cards. But anyway, I usually opt for a Nespresso and an RX bar. I can’t remember where I first had one of these, but I really love them. They have very few ingredients and plenty of protein from three egg whites to keep you going until lunch. I like the Coffee Chocolate (when it’s available which is basically never except on Amazon), Chocolate Peanut Butter, Coconut Chocolate, and Maple Sea Salt.

Day 2

Tuesday is usually my most productive day so it’s only fitting that I up my breakfast game on this day. Try a pineapple parfait with amaranth granola. Pile Greek nonfat yogurt with sweet & tart pineapple, a little granola, and a drizzle of honey. If you want to make the granola yourself, here is my recipe. Girls in my office were always jealous of this breakfast because it looks like a variation on an ice cream sundae. Very luxurious.

Day 3

Wednesday, whaaat? It’s not Friday yet? Treat yourself, girl! Mix up your morning with my yummy smoothie, which is pretty much a peanut butter chocolate milk shake in smoothie’s clothing. Freeze your bananas with the peel off whole (very important) in a Ziplock bag. This way, they are ready when you are and don’t get slimy or brown! Toss 1 ½ frozen bananas (sliced) into the blender with 1 tablespoon peanut butter, 1 teaspoon raw cacao powder, and enough rice milk to get it to a consistency you like (somewhere in the neighborhood of ¾ cup. If you want to double up the protein you can use whey protein too. Blend. Slurp. Go.

Day 4

There is usually nothing special about Thursday other than it comes directly before Friday. That is, until now! Try making it a Toasty Thursday. I usually opt for avocado toast by smashing ½ an avocado with a drizzle of olive oil, squeeze of a lemon, a few red chili flakes and a sprinkle of flaky sea salt on top. But for a real treat I butter a slice of toast, smear pecan butter on top and finish with a drizzle of honey and a pinch of sea salt.

Day 5

By Friday, I’m tired. But since I’m not into going out for breakfast, I prop my eyelids open with toothpicks and reach for my 20 dollar trusty egg steamer. I don’t have to think… all I have to do is poke a hole in the top of the egg, add the water in the nifty matching measuring cup and push the button. It turns off automatically when I have a perfectly soft boiled egg. A little sea salt or a dash of soy sauce + a piece of buttered toast should get you through your last meeting before lunch.
